Two months wed and I’m still blushing
But yet to meet in-laws despite all rushing.
They missed their son’s wedding to all our chagrin
But tonight we’ll start over, amending that sin.
An offering of peace I will try to present
In the form of a meal I hope they’ll not resent.
He says it’s a favorite, historically sound
So I’ve got my supplies in a pre-cooking mound.
I’ll start with diced bacon, which sounds pretty good.
I’ll fry it up crispy, the only way a girl should.
Pull out the meat but leave just a smidge of fat -
I hear it adds flavor, so I hope they like that!
Add one pound of pork to the same bacon pan
And hope that no one has turned vegetarian.
Shuffle the contents from pan to a plate.
This meal should go far in appeasing my mate.
Oh, turn down the burner! I’m so ill prepared.

Ok, chop up the veggies, each type one half cup -
Celery, red bells, green bells – hurry up!
Three quarter cup onion, throw it all on high heat.
Not exactly sautee, so just call me a cheat!
Add a teaspoon of salt, cumin, black and cayenne pepper,
One tablespoon garlic and dash of oregano together,
Throw in a cup of that long grain white rice.
Add a couple cups of chicken broth and boil it all nice.
Throw in the meats you reserved from before.
This looks pretty good and the smell I adore!
But no, what is this? Please tell me I’m wrong ...
A half pound of liver from chickens now gone?
I fear I’ll be sick, but if this is what it takes,
I’ll put it all in and serve this to those snakes.
No family that willingly eats livers is mine!
A sensible person knows well to decline.
The recipe calls for fresh chives as a garnish,
But frankly, this meal is too far gone, it’s tarnished.
I can not believe I’m putting this in my crystal!
If my spouse tries to kiss me, I’m grabbing the pistol.
I’m all for world peace, starting family first,
But for an heirloom recipe, this couldn’t be worse!

Ingredients:
6 slices bacon -- diced
8 ounces ground pork
3/4 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 tablespoon minced garlic
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon ground cumin
1/2 teaspoon ground oregano
1 cup long-grain rice
2 cupschicken stock or broth
8 ounces chicken livers -- trimmed, rinsed, patted dry, and minced
2 tablespoons fresh chives -- snipped
Directions:
Place a large heavy saucepan or Dutch oven over medium heat, and saute the bacon until slightly crisp, about 5 minutes. Remove the bacon from the pan and drain off all but 1 tablespoon of the fat.
Add the pork and saute, breaking it up into small pieces, until it has changed color. Using a slotted spoon, remove the pork from the pan and add it to the bacon.
Add the onion, celery, bell peppers, and garlic to the pan. Saute over low heat for 5 minutes. Then add the cayenne, salt, black pepper, cumin, and oregano. Stir, and cook an additional 3 minutes.
Stir in the rice and cook 5 minutes. Add the stock and the reserved bacon and pork. Bring to a boil; then reduce the heat, cover, and simmer for 10 minutes.
Stir in the chicken livers and cook, covered, 5 minutes. Serve immediately, garnished with the chives.
