I said it today,

I love the quote. I'd heard it before, couldn't remember who'd said it. You have an excellent interpretation of it. Saying "I love you" for the first time either comes far to easily (ie, they say it on the first date) or it's a terrifying prospect.
I like your list of three "say,/think,/do" as it's very powerful.
It takes more than one read to appreciate this poem properly, and that just serves to make it more powerful.
Your first two lines, "I said it today/you thought I wouldn't." are a great introduction, giving a slight hint as to what the ending may be.
I love the way you've laid it out, as well. It's very distinctive, and very good. I love the way you've used multiple spaces between "I may be." and "I love you." to indicate the pause.
