Wonderful Contest, Thanks For Hosting! I'm A Recipe Junkieeeee and cooking is my 2nd favorite hobby. Even though my children are grown with families of their own now, they're still over at-least once a week to eat and more often if they call and find out that one of their favorite meals is on the menu. The following recipe is by far my family's favorite desert and is always the first request for the holidays. The greedy little critters are now in the habit of requesting their own personal desert to take home!
Hope you and your family enjoy this simple, delicious treat as much as we do!
Chocolate Ec'laire
2 sm. boxes instant vanilla pudding
3 c. milk
1 medium container of Cool Whip
1 box graham crackers
Icing Mix:
1/2 cup sugar
1/3 cup cocoa
1/4 cup evaporated milk
1 Tbsp. vanilla extract
1 Stick margarine
Mix pudding with 3 cups milk, until smooth. Fold in Cool Whip until mixture is creamy.
Layer 9 x 13 container beginning with graham crackers on bottom, cover with part of pudding mixture then another layer of graham crackers. Continue layering until all mixture is used. Your top layer should be graham crackers. ( Usually makes 2-3 layers depending upon depth of pan)
Now you are ready to make the icing.
Icing: Bring sugar, cocoa and evaporated milk to a boil in a saucepan, over med. heat, stirring until smooth. Add margarine and vanilla. Mix until creamy smooth and shiny.
Allow to cool~then pour over graham cracker layer. Chill for at-least 4 hours.
Try using sugar-free pudding mix,skim milk, and low fat cool whip~no one will know the difference, it still yields a sweet, delicious dessert!

Thanks for sharing your delightful recipe with us. My sister makes this and it is wonderful!!! I know what you mean about the kids.... I have 3 that are married with families and they still act like little kids at the holidays. But you sound like you love yours as much as I love mine. Happy holidays and thanks for posting.
