A Mongolian khan’s fav’rite food
May bring glances that can be quite skewed
For he’d chop up his steak
And then ride with no break
Until horse sweat had made it quite stewed

This is a reply to the limerick "Stately Pleasure Dome...?" by Vera Rich.
The basis of the name “Steak tartare” is the legend that nomadic Tatar people of the Central Asian steppes did not have time to cook and thus placed meat underneath their horses' saddles.
I have taken a little licence linking steak tartare with Mongolians but, the original Ta-ta inhabited the north-eastern Gobi in the 5th century and, after subjugation in the 9th century by the Khitans, migrated southward, there founding the Mongol Empire under Genghis Khan.
