Veggie Soup for a Rainy Day

it's raining for 4 days now so I'm making veggie soup. here's my recipe if you want to make it too
2 tablespoons of olive oil

2 stalks of celery chopped up

1 middle size onion (i like using white ones but you can use any kind you like best) into little pieces and dont use the ends they dont cook good

2 leeks and cut off the dark end parts they dont taste good and then you cut them into Os. Theres 2 Os outside Os and inside Os so push em apart so you got lots of Os per cut

you take those 3 things and put them in a pretty big soup pan with the olive oil and make sure you got the lid ready too. put it on low and stir it once in the while until its all sauteed

1 carrot into chunks (like not big big chunks maybe nickle sized ones but twice as fat as nickles)

1 turnip into chunks (same like the carrots)

1 Red Potato (these can be like quarter size chunks)

a couple of diced tomatoes

put that stuff into the sauteed stuff and cover the pot but stir it once in a while and for like 15 minutes at least then when theyre cooked good put 8 cups of unsalted vegetable broth in the pot and let it get hot again then add

1 teaspoon of dry thyme

1 teaspoon of dry majoram leaves

1 teaspoon salt (you dont have to put salt if you dont want to but i do put a little)

3 chopped scallion onions (chop them good like Skittles size pieces)

let that all cook while you chop this stuff

2 cups fresh green beans

1 zucchini

1 yellow squash (or 2 yellow and no zucchini or 2 zucchini and no yellow but not 3 yellow and 4 zucchini )
(cut that stuff into chunks but not big, like nickles again)

put that stuff in the pot and put the lid back on and cook it like another 15 at least minutes, i let it simmer sometimes longer.

thats it then its done, i love to dip italian bread in my soup and i dont eat lot of bread but when i make veggie soup i gotta have bread too

      if you need a reference Peripatetic made the soup its pretty easy to make too if you get everything together first it goes pretty fast, when i make it Brad claims it like a caveman and eats it til he's got a belly
